Recipe: Sunrise Squares

This is the Meijer money-saving recipe of the week (using items on sale November 22-28) – great for breakfast, brunch or an unconventional dinner. Colleen recommended this recipe, which can also be found here on the Bob Evans website.

Sunrise Squares (recipe from Bob Evans)
Makes 6 squares

1 lb roll sausage (Odom’s Tennessee Pride is on sale – $1.45 after coupon)
2 slices bread, cut into 1/2 inch cubes
1/2 cup diced green and red peppers (I just use green since they are cheaper)
1 C shredded sharp cheddar cheese (Kraft shredded is on sale – $1.69)
6 eggs
2 cups milk
1/2 tsp salt
1/2 tsp dry mustard

  1. Preheat oven to 350. Crumble and cook sausage until browned. Drain off fat. Spread bread cubes in well greased 11×7″ baking dish and top with sausage, peppers and cheese.
  2. Whisk together the eggs, milk, salt and dry mustard until well blended and pour over cheese. Bake 30-40 minutes or until set. Let stand 5 minutes before cutting into squares, serve hot.

You could also serve up some free Pillsbury Grands biscuits with the eggs!
